The Flavor Experience
Slightly less creamy than a Gorgonzola Dolce, this fudgy blue has a pleasant tang without being too sharp.
The Story
This goats milk cheese is inoculated with Penicillium roqueforti spores. After its first month of aging, it is pierced to allow the cheese to blue and then matured to a full 90 days.
Usage Tips
Verde Capra finds affinity with some lighter, effervescent beers such as hefeweissens. Try a fruity Riesling. Slather on crusty bread and drizzle a bit of Italian chestnut honey on top.
